Vineyard and terroir
The fruit comes from several plots in Contrada Graffetta covering a total of 10 ha. The fertile soils are rich in marine limestone. The eight-year-old vines face south at an average elevation of 40 m and are planted at 6,500 vines per hectare. Both spur and cane pruning are used. Average yield is 1.2 kg per vine.
Grapes
100% Nero d’Avola, a variety also known locally as Calabrese.
Vinification
Harvest extends from the second half of September into the first half of October. Maceration lasts approximately 10–12 days at about 28°C. Malolactic fermentation takes place in stainless steel.
Ageing
The wine matures for six months, divided equally between tonneaux and stainless-steel tanks, followed by at least three months in bottle.
Technical data
Annual production is approximately 70,000 bottles.
Tasting profile
Deep, intense colour. Ripe red fruit aromas are complemented by nuances of leather. The palate is full-bodied and velvety, leading to a soft, juicy finish.
Serving and pairing
Serve at 16°C. Pair with pasta in meat-and-mushroom sauce, roasted dishes or medium-aged cheeses.
Label / history
Ispica and the wider Val di Noto are historic Nero d’Avola country, the grape taking its name from the town of Avola. In earlier times, during September and October, the area was filled with the scent of fermenting Nero d’Avola must, while grapes spilled from carts travelling to local crushing sites.
