The vines grow in marl and slate soils at 160 metres above sea level. Planting density is 5,000 vines/ha and the vines are 50 years old.
Vinification
The grapes are harvested by hand from late September to early October. Fermentation takes place in Slavonian oak barrels with native yeasts and 5% stems, followed by two weeks of skin contact.
Ageing
The wine ages in wooden barrels for 12 months, then is bottled and kept a further 6 months in the winery's cellars.
Tasting profile
Elegant.
Label / history
The "Dinostro" labels use a watercolour by an artist, made up of a variety of dots. Each year a different section of the artwork is selected for the label. The piece is ongoing and unfinished, so every vintage's label is unique. Around 10,000 bottles are produced each year.
