Questo vino
Vineyard and terroir
The fruit comes from Il Poggiolo’s vineyards in Montalcino, Tuscany.
Grapes
100% Sangiovese Grosso (Brunello). This was conceived as a traditional-method sparkling interpretation of the same grape used for Montalcino’s celebrated red wine.
Vinification
Whole berries undergo gentle pressing, followed by fermentation in stainless steel at 18 °C. The prise de mousse takes place in bottle according to the traditional method at 12 °C.
Ageing
The wine spends 36 months on its lees in bottle at a controlled temperature of 12–14 °C. Following disgorgement, it remains for another nine months in the winery’s temperature-controlled cellar before release.
Technical data
Annual production is limited to 4,000 bottles.
Tasting profile
The introductory description presents a refined straw-yellow color with delicate yet distinct pink reflections. A separate organoleptic note describes the color as lightly amber. The mousse is lively and effervescent, with a fine, abundant and persistent perlage. Aromas evoke flowers, bread crust and yeast. The palate has a pleasantly tart character and closes with a delicate bitter note.
Label / history
Known as “Le mie Bollicine Etichetta Rossa,” the wine reflects Rudy Cosimi’s experimental approach and is presented as the first sparkling wine made entirely from Sangiovese Grosso.
