Vineyard and terroir
Pinot Nero has been grown successfully in Alto Adige since the early nineteenth century. The gently sloping land and the microclimate of the Mazon area proved ideal for producing Pinot Nero of international quality. Hofstatter grows it on soils of clay, limestone and weathered porphyry.
The estate's vineyards lie on both sides of the Adige Valley, in different climate zones at elevations of 250 to 750 m above sea level. Soils vary with the geology of each area. Only organic fertilizers are used in the vineyards.
Vinification
After harvest, 75% of the grapes are destemmed and 25% go into the fermentation vats as whole bunches. Fermentation takes place on the skins at a controlled temperature for 10 days, with the cap regularly pushed down.
Ageing
The wine is aged in stainless steel tanks.

Label / history
The winery carries the name of its founder, Josef Hofstatter, and has done so for more than a century. It has expanded its vineyards and cellars gradually, combining family traditions with innovative approaches.
