Vineyard and terroir
The Pecorino grows in the company's own vineyards at 200 metres above sea level.
Vinification
The grapes are harvested by hand from 20 to 30 September. They are gently pressed at the winery and fermented in stainless steel tanks at a controlled temperature. The wine is described as natural.
Serving and pairing
Suited to an easy-drinking aperitif. It pairs with delicate fish dishes, soups and seafood.
