Vineyard and terroir
Produced at Masseria La Rosa del Salice in Salento, Puglia, on clay mixed with crushed limestone. Yield is 7 tonnes of grapes per hectare, equivalent to 45 hl of wine.
Grapes
100% Sauvignon Blanc.
Vinification
The grapes are gently pressed and fermented without their skins in stainless steel at controlled temperature for approximately 10 days.
Ageing
Maturation takes place in stainless steel.
Technical data
Bianco del Salento IGT. Harvest falls within the second ten days of September, described more narrowly as the third week of September. Alcohol is 12.5% vol.
Tasting profile
A fresh, aromatic and fruity white with exotic-fruit and varietal Sauvignon Blanc aromas. It is gentle and balanced on the palate, with equilibrium between sweetness and acidity.
Serving and pairing
Serve at 8–12°C. Pair with raw or cooked seafood appetizers, fish, squid, cuttlefish, fried fish, shellfish and fish soups. It also suits white meat, lean grilled pork, aubergines, peppers, and vegetable- or fish-based risotto.

The wine is dedicated to Giovanna, the family's mother, grandmother and great-grandmother.
