Vineyard and terroir
Produced at Masseria La Rosa del Salice in Salento, Puglia, from vines growing in clay mixed with crushed limestone. Yield is 10 tonnes of grapes per hectare, equivalent to 50 hl of wine.
Grapes
100% Negroamaro.
Vinification
The grapes are softly pressed and fermented at controlled temperature. Almost immediate draining gives the wine its characteristic rosé colour.
Ageing
Maturation takes place in stainless-steel vats.
Technical data
Rosato del Salento IGT. Harvest takes place in the second half of September. Alcohol is given as 13.5% vol. in the principal specification and 13% vol. in the technical data sheet.
Tasting profile
A fresh, fruity and pleasantly dry rosé with red-fruit, cherry and berry aromas. The bouquet is intense and persistent, while the palate is harmonious, velvety and persistent.
Serving and pairing
Serve at 8–10°C with crustaceans, fish, appetizers or light pasta dishes. It can accompany an entire meal.
