Tasting profile
Ruby red with warm garnet nuances. The bouquet is ethereal, intense and complex, with berry fruit accompanied by balsamic and spicy notes. The palate is full-bodied, well structured, austere and tannic, yet balanced, elegant and persistent. A published tasting note by Eric Guido for Vinous describes crushed black cherry, ashen stone, rose, candle wax, mineral-edged red fruit and cedar spice, with lively acidity and a chewy close marked by firm tannins, sour cherry and licorice.
Serving and pairing
Serve at 18°C in a grand balloon glass. Pair with red meat, game or aged cheeses.
