Vineyard and terroir
The vineyards occupy the hills of Montalcino at varying elevations, with sunlight lasting until sunset. Their average altitude is 250 m above sea level. Vines selected for this Brunello are more than 23 years old and grow in tuffaceous clay containing abundant skeletal material. The training system is a balanced bilateral cordon.
Grapes
100% Sangiovese.
Vinification
The vineyards undergo two rounds of bunch thinning. In good vintages, the average selection retains approximately three bunches out of five. A further grape selection takes place in the cellar. Vinification follows a traditional approach, beginning with intensive extraction during the first stages of fermentation and continuing with a long, undisturbed maceration on the pomace. The temperature reaches a maximum of 33°C and is kept high until racking.
Ageing
The wine matures for three years in Slavonian oak barrels, followed by a further 12 months in bottle.
Technical data
Alcohol: 14.5%. Annual production is approximately 45,000 bottles.
Tasting profile
Very deep, clear ruby red with garnet nuances. The bouquet is ethereal, intense and complex. The palate is powerful and substantial, with an important structure and austere tannins. Dark-cherry fruit leads into a smooth, peppery and leathery finish. The wine combines elegance with the capacity for extended ageing.
Serving and pairing
Serve at 18°C in a balloon glass. Pair with red meat, mature cheeses or traditional salami.
