Vineyard and terroir

The vineyards undergo two rounds of bunch thinning. At the end-of-September harvest, selection in good vintages retains approximately three bunches from every five. The fruit is selected again in the cellar before being processed in the traditional manner. Vines are trained to a balanced bilateral cordon on mixed clay soil rich in skeletal material.

Grapes

100% Sangiovese Grosso.

Vinification

The early stages of fermentation emphasize intensive extraction. This is followed by a long, undisturbed maceration on the skins. The temperature rises to a maximum of 33°C and is maintained at elevated levels until racking.

Ageing

The wine matures for 36 months in Slavonian oak barrels, followed by 12 months in bottle.

Alcohol: 14.5%. Annual production: 25,000 bottles.

Tasting profile

Intense ruby red with garnet highlights. The complex bouquet combines cherry and currant with earth, leather and tobacco. The dry palate has lively acidity, freshness and balance, supported by powerful tannins and a long, persistent finish. Cinnamon, pepper, rosemary and black cherry also feature in the published critical description, which characterizes the palate as initially restrained but rhythmically composed.

Serving and pairing

Serve at 18°C in a balloon glass. Pair with braised meats, slow-cooked ragù, aged cheeses and richly structured dishes.
