Vineyard and terroir
The grapes grow on alluvial soils in the municipality of San Giovanni al Natisone, in Venezia Giulia.
Vinification
The grapes are harvested by hand and carried to the winery in small crates. They undergo cold maceration in a horizontal press for 8 hours. The juice is then settled and fermented in stainless steel tanks at a controlled 15 °C.
Ageing
After fermentation the wine stays on its lees in the same stainless steel tanks for about five months. It is then bottled and given an extended period of bottle ageing before release.
Label / history
Livon was founded in the early 1960s by the Friulian Livon family, when Dorino Livon bought his first vineyards in the hills of Collio. His sons Valneo and Tonino joined him in the mid-1980s. The family reduced production to raise fruit quality and redesigned its vineyard layout. Its methods included short vine pruning, organic methods, high-density planting, the integration of native plants and low yields. They also built three large cellars.
Between 1992 and 1997 the winery acquired Villa Chiopris and Tenuta Roncalto in Friuli, and Borgo Salcetino in Chianti Classico, Tuscany. In 2001 it bought Fattoria Col santo in the Montefalco area. Livon now has more than 200 ha of vineyards and five brands, with wines classified as classic, Cru and Grand Cru.
