Vineyard and terroir
The fruit comes from a small vineyard in San Martino Alfieri.
Vinification
The grapes are harvested by hand at optimal ripeness, usually in early October. After selection on a sorting table, they are gently destemmed and pressed. Fermentation takes place in stainless-steel tanks for around 15 days at a maximum of 28 °C. The cap and must are mixed daily to improve the extraction of phenolic compounds. The must is then transferred to oak barrels, where spontaneous malolactic fermentation begins.
Ageing
The wine matures for 15 months in 500-litre oak barrels and barriques, followed by 6–12 months in bottle.
