Vineyard and terroir

Chardonnay and Pinot Nero are hand-harvested from high-altitude vineyards at Sorni, Pressano di Lavis and in the upper Valle di Cembra, between 400 and 750 metres above sea level. The climate and pronounced diurnal temperature shifts encourage ripening while preserving acidity and aromatic freshness.

Grapes

60% Pinot Nero and 40% Chardonnay.

Vinification

Whole bunches are gently pressed, followed by cold static settling. The musts are fermented separately in stainless steel at 16°C with selected yeasts for about 10 days. The base wines remain on yeast until the following spring. Selected yeasts are then added again for secondary fermentation in bottle according to the traditional method and Trento DOC rules.

Ageing

The wine matures on the lees for 36 months, developing structure, elegance and complexity.

Tasting profile

Delicate pink with bright copper reflections. The intense, complex bouquet combines small red berries, redcurrant and blackberry with an elegant fresh note. The palate is rich, savoury, harmonious and balanced, with a fine, persistent bead.

Serving and pairing

Serve at 8–10°C and open at the moment of service. Suitable as an aperitif and for celebrations, or throughout a meal with soups, fish and shellfish. It also pairs with white meats and feathered game.
