Vinification
Gravity is used to move the must during white vinification off the skins at a controlled temperature of 15–18°C. Prise de mousse and maturation on selected yeasts normally take approximately 60 days in pressure tanks at 13–14°C.
Ageing
The wine matures for approximately one month before release.
Technical data
Bottle pressure is 5.0 atm, residual sugar 9 g/L and alcohol 11%. Available in 0.20 L and 0.75 L bottles.
Tasting profile
Delicate straw yellow, enlivened by fine, persistent perlage. Golden Delicious apple, pink grapefruit and lime lead the aroma, followed by subtler pear, plum and wisteria. The palate is soft and silky, with the freshness and immediacy of newly picked fruit.

Serve at 6–8°C.
Label / history
Collezione 96 takes its name from the 96-point result achieved by Masottina’s Prosecco DOC Brut at a Decanter Magazine wine competition in 2017. The range carries forward a style centred on harmony and bears the signature of Adriano Dal Bianco.
