Vineyard and terroir

Fruit comes from selected estate vineyards. Five harvests—2020, 2021, 2022, 2023 and 2024—are combined in the final assemblage. Each harvest is picked by hand into crates at the beginning of September, with selection performed first in the vineyard and again in the winery.

Vinification

The vintages are handled separately. Whole clusters move by gravity and undergo gentle pressing; the free-run juice then ferments for 8–10 days at a controlled 15–18°C. The resulting base wine matures on its lees for 60 days. Secondary fermentation with selected yeasts takes place in pressure tanks for one month at approximately 13°C, followed by around 100 days of continued refinement. Each component is gently filtered before preservation in a pressure tank.

Ageing

The separate vintage components retain their individual identities in pressure tanks, with the most mature wine aged for as long as 60 months. They are subsequently assembled into the finished multivintage Brut.

Technical data

Residual sugar is 9 g/L, alcohol 11.5% and bottle pressure 5.5 atm. Available formats are 0.75 L and 1.5 L.

Tasting profile

Straw yellow with greenish-gold reflections, the wine has a fine, persistent stream of bubbles. Bergamot and ripe citrus lead the bouquet, followed by nectarine, loquat, melon and pineapple. Exposure to air brings forward cinnamon, ginger and vanilla, together with white-mulberry blossom. Mineral and saline nuances close the aromatic profile. The palate is complex, layered, harmonious and juicy, combining an intense yet dynamic structure with vivid freshness and a persistent saline, mineral finish. Its 9 g/L of residual sugar contributes a smooth, rounded and generous texture.

Label / history

The inaugural wine of the Heritage Collection marks 80 years of Dal Bianco family experience, whose winemaking history began in 1946. Conceived as a precision multivintage project, it uses time and the separate development of individual harvests to build complexity, balance and aromatic finesse. It is produced as a limited edition.
