Vinification
The grapes undergo white vinification off the skins at a controlled temperature of 15–18°C. Prise de mousse and maturation on selected yeasts normally take place for one month in pressure tanks at 13–14°C.
Ageing
The wine matures for approximately one month before release.
Technical data
Bottle pressure is 5.0 atm, residual sugar 9 g/L and alcohol 12%. Available in 0.75 L and 1.5 L bottles.
Tasting profile
Crystal-clear straw yellow, with fine and continuous perlage. The bouquet is delicate and fruity, with floral and fruit nuances. Lively and soft on the palate, finishing with a pleasant aromatic note and a fresh, dynamic balance.
Serving and pairing
Serve at 6–8°C.
Label / history
Virage expresses the more informal, contemporary side of Masottina. Its selected grapes are vinified and made sparkling with the same detailed approach used throughout the Dal Bianco family’s range.
