Vinification
The red-berry grapes undergo a brief maceration lasting 24–36 hours at 8–10°C. The wine page describes subsequent red vinification and a low-temperature prise de mousse in pressure tanks. The technical sheet instead describes vinification off the skins at 15–18°C, followed by prise de mousse and maturation on selected yeasts for about one month in pressure tanks at 13–14°C.
Ageing
The wine matures for approximately one month before release.
Technical data
Bottle pressure is 5.0 atm, residual sugar 9 g/L and alcohol 11%. Available in 0.75 L bottles.
Tasting profile
Radiant pink, with fine, persistent perlage. The clean, characteristic bouquet evokes wild berries, particularly raspberries, wild strawberries and redcurrants. Full-bodied, silky and linear on the palate, it mirrors the fruit of the aroma and closes with a long, enveloping finish.
Serving and pairing
Serve at 6–8°C.
Label / history
Virage expresses the more informal, contemporary side of Masottina. Selected grapes are vinified and made sparkling with the same attention to detail applied throughout the Dal Bianco family’s range.
