Vineyard and terroir
The vineyards are located near Locorotondo in the province of Bari, Puglia, at elevations of 300–450 metres. The vines are 20–35 years old and grow in limestone and red soils coloured by iron oxide.
Vinification
After harvest, the grapes are destemmed and cooled to 6–8 °C. They undergo 12 hours of maceration, followed by gentle pressing and settling of the must. Fermentation takes place at a controlled temperature of 16–18 °C.
Ageing
The wine remains on its fine lees for three months before bottling, followed by a further 30–40 days in bottle in the winery’s cellars.
