Vineyard and terroir
The grapes grow on red, limestone-rich soils in the Itria Valley. The vineyards lie at approximately 450 m above sea level, and the vines average 15 years of age. Winters are harsh; summers are generally long and warm, with cooler nights.
Vinification
The grapes are harvested at optimal ripeness, destemmed and macerated at a controlled temperature of approximately 10 °C. Alcoholic fermentation takes place on the skins in temperature-controlled steel tanks for 10–15 days. The wine is then gently pressed from the pomace and briefly settled to remove coarse sediment before undergoing malolactic fermentation.
Ageing
The wine matures for 12 months in medium- and lightly toasted French oak barrels. After stabilization and bottling, it rests in the winery’s cellars for at least three months.
