Vineyard and terroir
The grapes grow in northern Salento, Puglia, at 250–350 m above sea level. The soils are limestone and clay, and the vines are 15–30 years old.
Vinification
The grapes are harvested at optimal ripeness and destemmed, then macerated at 4–5 °C for 36 hours. Alcoholic fermentation takes place in stainless-steel tanks at a controlled temperature of 24–26 °C for around 13 days. The wine is then gently pressed off the skins and undergoes malolactic fermentation.
Ageing
The wine ages in French oak barrels for four months, followed by additional maturation in bottle for an unspecified period.
