Vineyard and terroir
The grapes grow in the Itria Valley in Salento, on the region’s distinctive red limestone soils. The vineyards lie at an altitude of 450 m, and the vines are 15 years old on average. Winters are harsh, while summers are generally long and warm, with cooler nights.
Vinification
The grapes are harvested at optimal ripeness, destemmed and macerated for 48 hours at a controlled temperature of 4–5 °C. Alcoholic fermentation takes place on the skins in temperature-controlled steel vats. The wine is then gently pressed off the pulp and undergoes malolactic fermentation.
Ageing
The wine ages in oak barrels for four months, followed by at least three months in bottle in the winery’s cellars.
