Vineyard and terroir
The grapes grow on red, calcareous soils in the Itria Valley in Salento. Layers of stone allow the roots to reach deep moisture reserves, helping protect the vines during drought. The area has harsh winters and generally long, warm summers with cooler nights. The vines average five years of age.
Vinification
The grapes are harvested at optimal ripeness, destemmed and macerated at a controlled temperature of approximately 10 °C. Alcoholic fermentation takes place on the skins in temperature-controlled stainless-steel tanks for 10–15 days. The wine is then gently pressed from the skins and pulp and briefly settled to remove heavier sediment before undergoing malolactic fermentation.
Ageing
The wine matures for 18 months in medium- and light-toast French oak barrels. After stabilization and bottling, it rests for at least six months in the winery’s cellars.
