Vineyard and terroir
The grapes grow in the Valle d'Itria on limestone-rich red soils containing layers of stone. These layers encourage deep root growth, giving the vines access to moisture and helping to protect them during drought. Winters are harsh, while summers are generally long and warm with cooler nights. The vines average five years of age.
Vinification
The grapes are harvested at optimal ripeness, destemmed and pressed. Alcoholic fermentation takes place in temperature-controlled steel vats.
Serving and pairing
Pair with Mediterranean dishes, seafood and shellfish, pesto pasta, fried fish, risotto or vegetables.
