Vineyard and terroir
The Cabernet Sauvignon and Sangiovese Grosso grow in the San Pio vineyard, in the southeastern part of Montalcino near Castelnuovo dell’Abate. Planted in 1975, the vineyard has southeastern and southwestern exposures. Its poor soils comprise clay, tuff, river pebbles and sandstone, and the vines naturally produce limited yields.
Grapes
The Sangiovese is Sangiovese Grosso (Brunello).
Vinification
Healthy grapes are harvested by hand at optimal ripeness and carefully selected. After destemming and pressing, they ferment with natural yeasts in reinforced-concrete tanks.
Ageing
The wine matures for 18 months in French oak barriques and tonneaux, followed by six months in bottle in the winery’s cellars.
