Vineyard and terroir
The grapes come from the Schiena d’Asino vineyard, whose southeast-to-southwest exposure follows a hill shaped like a donkey’s back, from which the site takes its name. Its poor soil requires the vines to develop deep roots over many years to obtain sufficient nutrients. Planted in 1975, the vineyard has been maintained by replacing dead plants and adding young vines; it now contains more vines than the original planting while retaining its average vine age over time.
Grapes
Sangiovese Grosso, also known as Brunello, is used.
Vinification
Only carefully selected grapes harvested at optimal ripeness are used. Traditional vinification is carried out with natural yeasts.
Ageing
The wine matures for 42 months in 16-hectolitre Allier oak casks, followed by at least 12 months in bottle.
