Vineyard and terroir

The vineyards lie in the municipality of Serralunga d’Alba at approximately 300 metres above sea level. They face south and southeast and grow on clay soils rich in calcareous marl. Average yield is 55 hl/ha.

Grapes

100% Nascetta. The wine is certified organic.

Vinification

The grapes are harvested into small 20 kg crates and delivered immediately to the cellar. When necessary, they are cooled to 12–15°C before pressing. Whole clusters are pressed without conventional destemming, preventing damage to the stems and allowing a particularly gentle extraction of free-run juice. The must settles in tank for 24–36 hours; coarse sediment is then removed by racking. The clarified must is brought to 16°C to initiate alcoholic fermentation, which generally lasts at least three weeks.

Ageing

The wine is racked 8–10 days after fermentation finishes and remains on its fine lees until early spring, when preparation for bottling begins.

Alcohol: 13% vol. Average yield: 55 hl/ha. Bottle format: 0.75 L.

Tasting profile

Straw yellow with greenish highlights. The intense bouquet combines white fruit and apricot and may develop aromatic-herb notes. The palate is enveloping, crisp and subtly acidic, with pleasant persistence and a savoury nuance.

Serving and pairing

Serve at 12°C. Its crisp character makes it suitable as an aperitif and with starters, risotto and pasta dishes.
