Questo vino
Vineyard and terroir
The wine is selected from estate-owned Nebbiolo vineyards in Serralunga d’Alba. The vines grow on middle and upper hillsides at 300–450 metres, with east and southeast exposures. The soils are of Miocene–Helvetian origin and contain abundant clay and calcareous marl. The gentler sunlight on the eastern slopes supports the wine’s floral, aromatic and spicy expression.
Grapes
100% Nebbiolo.
Vinification
Traditional floating-cap fermentation takes place in temperature-controlled stainless-steel tanks for 12–15 days. The wine then remains in contact with the skins for another 15–20 days under a submerged cap, promoting the extraction of polyphenols.
Ageing
Maturation lasts 12 months in medium and large oak barrels of 20–140 hl, followed by at least six months in bottle.
Technical data
Alcohol: 14% vol. Average production: 49 hl/ha. Available formats: 0.75 L, 1.5 L and 3 L.
Tasting profile
Garnet red with ruby nuances. The aromatic profile features nutmeg, dried tobacco leaves, plum, tamarind and traces of withered rose. Sweet, enveloping tannins give a velvety, balanced palate, followed by a notably long balsamic finish.
Serving and pairing
Serve at 18°C. Pair with richly flavoured pasta, meat dishes and medium-aged cheeses. The wine generally reaches its peak four to six years after harvest, although the precise window varies substantially with the vintage.
