The fruit comes from vines planted with eight different Chardonnay clones.
Grapes
Eight Chardonnay clones are used.
Vinification
The grapes are harvested by hand in early September and gently pressed. Fermentation takes place in stainless-steel tanks at 20 °C for 15 days.
Ageing
The wine rests on its lees for four months, followed by six months in bottle.
