Vineyard and terroir
The grapes are grown in the commune of Matelica.
Vinification
The grapes are harvested by hand during the first ten days of October. Fermentation takes place in stainless-steel tanks for 12–15 days at 20 °C, followed by malolactic fermentation in late spring.
Ageing
The wine rests on its lees until spring.
