Vineyard and terroir
Shamaris comes from hillside vineyards at Tenuta Monte Pietroso in Monreale, Palermo, at 400 metres above sea level. The vines face north and grow on sandy soils, exposed to the Tramontana wind as it carries maritime air inland. Planting density is 5,000 vines per hectare and yield is 75 quintals per hectare (7,500 kg/ha).
Grapes
100% Grillo. The elevated, wind-exposed site is associated with the variety's aromatic expression and freshness.
Vinification
The grapes are harvested manually into crates during the first half of September. Vinification begins with five hours of cold skin maceration at 14°C, followed by pneumatic pressing, nitrogen saturation and cold settling. Fermentation proceeds at 18–20°C.
Ageing
The wine remains in stainless-steel tanks on its fine lees for four months, followed by further ageing in bottle.

Tasting profile
The wine is characterised by pronounced aromas and freshness. Its high-altitude origin gives the Grillo a more complex and elegant expression, while the sandy site and maritime influence contribute freshness and savoury character.
Label / history
The name Shamaris evokes the nearby sea, whose presence is carried toward the vineyards by the northerly Tramontana wind.
