Vineyard and terroir

Apricaia comes from upper vineyard sites at Tenuta Moraia in the heart of the Tuscan Maremma. The vines receive ample sunshine and cooling maritime breezes. Their roots penetrate clay-rich soils threaded with limestone and limestone conglomerates. Sea currents and abundant rainfall moderate the warm climate and support long, even ripening.

Grapes

40% Cabernet Sauvignon, 40% Merlot and 20% Cabernet Franc.

Vinification

Selected Cabernet and Merlot grapes are harvested by hand and vinified separately. After crushing and destemming, the must macerates in stainless-steel tanks. Frequent punch-downs promote deep colour extraction, complexity and supple tannins. Fermentation takes place at controlled temperature.

Ageing

Following an initial 12-month period, the final blend is assembled. It may then complete its maturation with a further year in second-use French barriques. After bottling, Apricaia rests for four months before release.

Technical data

Alcohol: 14% vol. Bottle format: 0.75 L.

Tasting profile

Ruby red in colour. Hibiscus and violet lead the floral bouquet, followed by sour cherry, strawberry, blueberry and chocolate. The palate is deep, complex and elegant, with liquorice and mineral notes. A defined tannic structure carries the wine into an elegant, persistent finish.

Serving and pairing

Serve at 18 °C. Suited to slowly cooked dishes including peposo, braised meats and game stews, especially wild boar.

Label / history

The name combines the Latin apricus, meaning an open, sunny place, with the suffix “-aia,” which conveys abundance. It reflects the expansive, sunlit landscape of the Maremma.
