Produced from Vermentino grown in Maremma Toscana at Tenuta Moraia.

Vinification
A slow secondary fermentation takes place in a small pressurised tank.
Ageing
The sparkling wine remains in contact with the lees for 6–9 months. Once the intended complexity and structure have developed, it receives its final dosage and is bottled.

Tasting profile
The fragrant bouquet combines aromatic herbs with tropical notes of guava and pineapple, completed by citrus and a lightly spicy accent. The lively mousse has a soft texture, while the rich finish retains an energetic, savoury character.
Serving and pairing
Serve at 6–8 °C. Pair with seafood, baked fish, amberjack tartare, octopus carpaccio, sushi or sashimi, or pour as an aperitif.
