Grapes
The blend comprises 50% Chardonnay, 40% Garganega and 10% Trebbiano di Soave.
Vinification
Harvest timing varies by variety: Chardonnay is picked in mid-August, while Trebbiano di Soave and Garganega are harvested in the first ten days of September. The grapes are pressed whole and the must is drained. The base wine ferments at 12–13 °C. After alcoholic fermentation, it is racked and undergoes secondary fermentation in autoclaves using the Charmat method.
Label / history
The name refers to traces of a Bronze Age proto-Venetian culture found on Monte Zoppega and recalls the history of the hills of Soave. The wine is produced in very small batches.
