Vineyard and terroir
The fruit comes from two growing areas in eastern Sicily. Insolia and Viognier are cultivated on sandy hillside soils, while Carricante grows at high altitude on Mount Etna in mineral-rich volcanic soils.
Grapes
The blend brings together the local varieties Insolia and Carricante with Viognier, an international variety adapted to Sicily’s climate.
Vinification
The grapes are harvested by hand between August and September. They undergo one day of cold maceration, followed by gentle pressing and 48 hours of static settling. Fermentation lasts 20–25 days at a controlled temperature of 15–18 °C.
Ageing
The wine rests on its fine lees in stainless-steel tanks, followed by a further two months of maturation in bottle.
