Vineyard and terroir
The grapes come from organic vineyards on sandy soils, 200–250 metres above sea level. The Fondo Filara collection as a whole is grown organically in the Etna and Vittoria areas of Sicily.
Vinification
The grapes are selected and harvested by hand in September. Winemaking begins with one day of cold maceration, followed by fermentation for 10–15 days at a controlled temperature of 24–26 °C.
Ageing
The wine is aged first in stainless steel tanks, then for 5–6 months in oak barriques. After bottling it rests at least 4 more months in bottle.
Tasting profile
A rich, aromatic dry red.
