Vineyard and terroir

The 7-hectare vineyards lie in Santo Stefano Briga, between Messina and Taormina. They occupy a very steep slope at elevations ranging from 0 to 450 metres above sea level. Yields do not exceed 1 kg of grapes per vine.

Grapes

Nerello Mascalese and Nerello Cappuccio form the main part of the blend, with Nocera, Tignolino, Acitana, Galatena and Calabrese.

Vinification

The grapes are harvested by hand and carefully selected. Vinification takes place traditionally in small stainless-steel tanks at a controlled temperature.

Ageing

The wine matures in small new oak barrels, followed by 18 months in bottle in the winery’s cellars before release.

Label / history

The Palari winery was founded in the eighteenth century in Santo Stefano Briga, in the province of Messina, with the aim of reviving ancient winemaking traditions through modern methods. Its founder was Salvatore Geraci. Palari released its first wine in 1990 and now makes three wines: Palari Faro, Rosso Del Soprano and Santa.Ne'. Annual production of Palari Faro does not exceed 25,000 bottles, while the winery’s total production remains below 40,000 bottles.
