Vinification
Produced only in years when the harvest is of exceptional quality. The grapes are harvested by hand in late September, fermented with native yeasts and given a long maceration on the skins. The wine is bottled without filtration.
Ageing
The wine rests on its lees in stainless steel tanks for 10 months, followed by further ageing in bottle in the winery’s cellars.
