Vineyard and terroir
The vineyards lie in the Marsala area, where the conditions produce exceptionally rich and varied soils. The marine microclimate helps prevent mould, and the constant wind moderates high summer temperatures and keeps moisture from building up. The wine is organic.
Vinification
The grapes are harvested by hand in early August and gently pressed. Alcoholic fermentation starts spontaneously with naturally occurring yeasts and lasts 14 days at 15 °C.
Ageing
The wine matures for 3 months at controlled temperature in concrete tanks. After bottling it rests a further 6 months in the winery's cellars.
Tasting profile
Elegant, with a fresh, refined taste and an expressive aroma. The character is fresh and fruity, light and delicate, with a pleasant texture.
Serving and pairing
Suited to aperitifs, appetizers and fine cheeses. Named pairings are fried fish and seafood, including shrimp, tuna, cod, squid, oysters and mussels.
Vintage notes
