Vineyard and terroir
The fruit comes exclusively from Cantine Paolini's own vineyards, which cover more than 2100 ha. The estate follows traditional viticulture with natural cultivation methods, and Sicily's favourable and distinctive microclimate shapes the wines.
Vinification
The grapes are harvested in mid-September and gently pressed. Alcoholic fermentation takes place with skin maceration at 28 °C for 12 days, followed by malolactic fermentation.
Ageing
The wine spends at least 6 months in oak barrels, then is transferred to specially lined concrete tanks. It then matures in bottle for 6–8 months.
Tasting profile
Authentic Mediterranean character with an expressive fruit profile, showing the warmth and softness typical of Nero d'Avola. A young wine, ready to drink now.
Serving and pairing
Best served in wide-mouthed glasses. It suits traditional Italian dishes, local cured meats and cheeses.

Label / history
Gurgo is one of three ranges from Paolini, alongside "Conte di Matarocco" and "Cantine Paolini". The estate lies in the Marsala wine-producing area, in Palermo, and was founded in 1964. It makes native wines from Insolia, Grillo, Grecanico, Catarratto, Nero d'Avola and Frappato. Paolini wines were long sold directly from the cellar, unbottled. In 2004 the decision was made to target international markets, which led to the creation of Cantine Paolini S.r.l., a company dedicated exclusively to bottling the estate's wines.
