Vineyard and terroir
The grapes come exclusively from the estate's own vineyards, which cover more than 2100 ha. The estate follows traditional viticulture and uses natural growing methods. The text points to Sicily's favourable microclimate and the warmth of its soils.
Grapes
Frappato 60%, Syrah 40%.
Vinification
The grapes are harvested by hand between August and September. They are gently pressed, then fermented on the skins at 27 °C for around 11 days. Malolactic fermentation follows to soften the acidity.
Ageing
The wine is aged for at least 6 months in large, very fine-grained oak casks, which develop a velvety texture, then transferred to glass-lined cement tanks. Blending takes place after ageing, followed by another 6–8 months in bottle to develop the bouquet.
Tasting profile
Clear berry aroma and a soft, fruity palate; velvety in texture.
Serving and pairing
Suits long-stemmed, tulip-shaped glasses. Pairs with meat dishes and aged cheeses.
Label / history
"Gurgo" is one of three ranges from Cantine Paolini, alongside "Conte di Matarocco" and "Cantine Paolini". The estate is based in the Marsala area, in Palermo, and has existed since 1964. Its wines were long sold only straight from the cellar, unbottled. In 2004 it founded Cantine Paolini S.r.l., a facility dedicated to bottling the estate's wines, in order to make products for international markets.
