Vineyard and terroir
The grapes are strictly selected from Cantine Paolini’s estate vineyards in Sicily, which extend over more than 2,100 ha. The island’s microclimate contributes to the wine’s character.
Vinification
The grapes are harvested by hand from August to September, gently crushed and fermented slowly under controlled conditions.
Tasting profile
Bright and very fresh, with a generous aroma and the minerality of its terroir.
