Vinification
After harvest, the grapes are carefully selected and briefly dried in crates to concentrate their aromas and sugars. After pressing, the juice remains in contact with the skins for 12 hours to add complexity and structure. Fermentation takes place in temperature-controlled stainless-steel tanks.
Ageing
Part of the wine is aged in French oak barrels.
Label / history
The wine draws on the Pasqua family’s connection to Verona and the story of Romeo and Juliet. Its label features an original photograph of Juliet’s courtyard by Gio Martorana.
