Vinification
Part of the harvest is dried in small wooden crates in well-ventilated rooms. Dry air, ventilation and controlled humidity reduce the grapes’ moisture by up to 30%, concentrating glucose. Because the varieties ripen at different times, each is vinified separately in steel fermentation tanks before blending.
Ageing
The wine spends three months in oak tonneaux, followed by further ageing in bottle in the winery’s cellars.
Vintage notes
In 2021, average yields in Veneto were 7% lower than in the previous year. The growing cycle began slightly later, and frost affected some vineyards during budding on 7 and 8 April. Flowering and fruit set brought generally low temperatures and heavy rainfall. From June, temperatures matched seasonal averages and peaked during the first ten days of August. Rainstorms and hail caused significant crop losses in some places, although the grapes remained healthy and of good quality.

The wine refers to the story of Romeo and Juliet and its association with Verona. The label features an original photograph of Juliet’s courtyard by Gio Martorana.
