Vineyard and terroir
The fruit comes from vineyards in the Menfi and Sambuca di Sicilia areas at 150 metres above sea level. Although the soils vary, they are consistently rich in limestone, organic matter and clay. Yields are limited to 1.7 kg per vine.
Grapes
The blend comprises 70% Cabernet Sauvignon and 30% Cabernet Franc.
Vinification
After harvest, the grapes are crushed with their stems and fermented in stainless-steel tanks at 28 °C for 15–18 days.
Ageing
Malolactic fermentation and 14 months of ageing take place in 225-litre Allier oak barrels, 50% of them new. The wine then matures in the winery’s cellars for a further 12 months after bottling and before release.

Label / history
“Burdese” means “Bordeaux” in the local Sicilian dialect. The wine was first produced in 1999.
