Vineyard and terroir
The fruit comes from the "Contrada Taccione" vineyard on the Feudo di Mezzo estate on Etna. The lava-sand soil is black and exceptionally rich in minerals. The vineyard is surrounded by woodland and recent lava flows. The vines are grown according to sustainable and natural farming principles, and the wine is organic. The combination of black sand and altitude gives the wine complex aromas and a wide range of flavours.
Vinification
The grapes are harvested by hand and chilled overnight. The next day they are hand-sorted, destemmed and gently pressed. 85% of the must ferments in stainless steel tanks at 15 °C for 20 days; the remaining 15% ferments in tonneaux.
Ageing
The wine ages on its lees for 6 months in stainless steel tanks and 500-litre French oak barrels.
