Vineyard and terroir
The grapes grow in the Sciara Nuova vineyards in the Castiglione di Sicilia area, at 870 m. Volcanic soils give the fruit a fresh, mineral character.
Vinification
Harvest begins on 5 October. The grapes are gently pressed, and the juice ferments with yeast in stainless-steel tanks at 15 °C for 20 days.
Ageing
The wine remains on its lees until February before bottling.
