Vineyard and terroir
The grapes grow at 100–250 m above sea level in the Ulmo, Gurra and Dispensa vineyards, located in the Menfi and Sambuca di Sicilia areas. The Ulmo vines were planted in 1985, Dispensa in 1996 and Gurra in 1998.
Vinification
Harvest begins with Chardonnay and Fiano on 10–12 August, followed by Viognier on 25–30 August and Grecanico on 25–30 September. The grapes are destemmed and crushed under nitrogen in an oxygen-free environment. After the juice settles overnight at low temperature for clarification, selected yeasts are added. Fermentation takes place in stainless-steel tanks for 12 days at 15 °C.
Ageing
The wine remains in stainless-steel tanks until bottling in the second half of July.
Tasting profile
The aromatic bouquet leads to a rounded, harmonious and well-balanced palate.
Label / history
Produced since 1995, La Segreta takes its name from a type of tree found in the woods surrounding the vineyards at Ulmo.
