Vineyard and terroir
The Grillo grapes grow in vineyards at Menfi, 75 m above sea level, on clay and limestone soils that accentuate the variety’s distinctive aromas. The vines are trained using the Guyot system.
Vinification
Harvest generally takes place in early September, when the grapes have reached optimal ripeness. After destemming and gentle pressing, the must is settled at low temperature, then fermented in stainless-steel tanks at 15 °C.
Ageing
The wine remains in the same stainless-steel tanks on its fine lees for six months, with regular bâtonnage.
Tasting profile
Clean and aromatic, with full flavours, freshness and a bright, lively character. The palate is balanced and complex.
Label / history
First produced in 2016. Its name refers to the terebinth, a glossy-leaved shrub long associated with Sicily and the Mediterranean landscape.
