Vineyard and terroir
The Sangiovese and Cabernet Sauvignon come exclusively from the Rompicollo vineyard at the Pitigliano estate in Maremma Toscana. Its south-west-facing, volcanic soil is rich in tuff. The Guyot-trained vines have an average planting density of 6,500 vines per hectare.
Grapes
60% Sangiovese and 40% Cabernet Sauvignon.
Vinification
Fermentation takes place in stainless-steel vats at controlled temperature for 10 days.
Ageing
The wine matures for 12 months in 65 hl Slavonian oak casks.

Tasting profile
Deep, bright ruby red. The elegant, varied bouquet combines ripe blackberries and raspberries with dried aromatic herbs and delicate sweet spices. The palate is full-bodied, rounded and mouth-filling, with velvety tannins, rich flavour and an attractive suppleness.
Serving and pairing
Serve at 16–18°C. Pair with risottos, substantial pasta dishes, white meats, Italian cold cuts, and fresh or moderately aged cheeses.
Label / history
Rompicollo was the first wine made by the Tommasi family in Maremma Toscana and became the flagship of the Poggio al Tufo project. The estate joined the family in 1997. The name can evoke both “breakneck” and a steep, slippery slope—a risky adventure—and was adopted as a good-luck emblem for the family's first Tuscan venture. The Rompicollo vineyard extends over 66 hectares.
