Vinification
The grapes are harvested by hand and partially dried after harvest according to the traditional appassimento method, concentrating their sugars and aromas. Fermentation takes place at a strictly controlled temperature in modern stainless-steel tanks.
Ageing
A small proportion of the wine is aged in oak barrels, adding structure and complexity while preserving its balance and fruit character.
Tasting profile
Rich and deep, with expressive fruit, freshness, subtle structure and complexity, natural balance and a full flavour.

Edizione Limitata denotes limited production and careful quality control throughout production. Gran Appasso is a brand encompassing wines made in different parts of Puglia. It was created to present a modern expression of the region while reviving the ancient agricultural technique of appassimento.
